Homemade Chunky Applesauce

Whether it is a side for a beautiful plate of breakfast eggs of a hearty pork chop at dinner, this favorite side in my household and perfect for any season. Tip:  You can use any kind of apple, but for me, Honeycrisp is just the right flavor for perfection in this recipe.

Homemade Chunky Applesauce

3 pounds Honeycrisp apples.  They need to be peeled, cored, and cut into small bits

1/2 cup apple juice or water

Juice of ½ lemon

1/4 cup packed brown sugar, packed

1 teaspoon cinnamon

½ teaspoon of good vanilla extract

(Makes 6 servings)

INSTRUCTIONS

Combine apples, water (cider), lemon, cinnamon and brown sugar ingredients in a large pot. Cover and cook over medium-low heat 30-40 minutes or until apples are tender, stirring occasionally. Remove from heat; stir in vanilla.  Mash apples slightly, leaving just enough to keep it chunky.  Add vanilla once taken off the heat and continue to stir.  Let cool and then ENJOY!
