Spinach Bars (Gluten Free)

Wait until completely cooled then cut into squares.bars so much better!  Yes, the ingredients are the same, but these little cutie-pies are so easy to freeze and certainly easy to grab and go!  Heated or cooled, these little green charms are perfect for a snack, an appetizer, a quick breakfast bite or a delight while lounging by the pool or on a boat.

Ingredients

1 package (10 ounces) frozen chopped spinach

2-1/2 cups gluten free herb-seasoned stuffing mix (you can use regular mix, also)

1 medium onion, finely chopped

3 eggs, beaten

1/4 cup grated Parmesan cheese

6 tablespoons butter, melted

1/2 teaspoon garlic salt

1/4 teaspoon pepper

Directions

  1. Cook spinach according to package directions; drain well, squeezing out excess liquid.

  2. Combine spinach with remaining ingredients in a large bowl. Then lay into a 9×9 sprayed baking dish.

  3. Bake at 350° for 12-17 minutes or until very lightly browned.

  4. Wait until completely cooled then cut into squares.
